12 @ Madison is a globally inspired, Congress Park eatery that serves an ambitious array of affordable, shareable dishes. The intimate restaurant offers a dynamic menu that spans from Italy to Latin America to the Middle East. Though the offerings change slightly every few weeks, Jeff Osaka and his team, which includes chef de cuisine Ashley McBrady, consistently delight diners with creative presentations and refreshing simplicity

Our restaurant focuses on the lesser known definition of ad hominem: "relating to a particular person," or the Latin to English translation, "to the man." This definition and translation provides a positive connotation of a personal relationship which is what we convey through our food and service.

Each day we will deliver thoughtful service to you to convey the best dining experience possible. With a strong commitment to the local community, we hope that Ad Hominem will be a restaurant for the people and provide a gathering place for friends, families, and new connections.


Brewed Food brings the two worlds of chefs and brewers together, using the ancient craft of fermentation to elevate both food and beer to a whole new level. In order to do that, Brewed Food created a cutting edge food lab based in Denver, CO, tapping into the most innovative applications of fermentation. We are reverse engineers, we are molecular gastronomers and we are pioneers.


CHUBurger is a fast-casual burger bar to the RiNo neighborhood, where it serves up not only burgers made with beef fed on spent grain from the brewery but other sandwiches, down-home sides, shakes and craft beers galore in laid-back digs filled with reclaimed wood and funky artwork. Pairs perfectly with a bloody mary on a Sunday afternoon!

Concourse Restaurant Moderne is ChoLon Concepts’ third restaurant, serving seasonally focused American cuisine in Denver’s Stapleton neighborhood. The restaurant is a homage to the airport which formerly occupied the site, and it embraces the definition of the word “concourse”: a space where pathways cross; a gathering of people; a meeting place. The restaurant’s casually sophisticated design is both inviting and intimate, and is suitable for occasions ranging from family dinner, date night, and business meetings to special celebrations. Having established his Denver roots with his popular Southeast Asian concepts, ChoLon and Cho77, Chef/Owner Lon Symensma thought the cuisine at Concourse should represent the quality, flavor, and spirit of Colorado. Symensma teamed up with Executive Chef Luke Bergman, with whom he worked in New York City, and together they have created a menu showcasing seasonally-focused ingredients prepared with simplicity and grace.

Inspired by the thriving news industry of the past, Courier’s menu offers diners the opportunity to experience classic dishes reinvented. Guests can meet, chat, and enjoy an eclectic selection of fare in a bustling, newsroom themed space.

LOW Country Kitchen

LOW Country Kitchen is a heartfelt homage to the best in Southern cooking. Bustling and bright, the restaurant reflects the spirit and passion behind America’s “favorite” food.


With its polished vintage vibe and sidewalk patio overlooking Downtown, this Italian transplant from Ohio to LoHi makes a relaxed spot to enjoy a wide array of classic and contemporary antipasti, pizzas, pastas and secondi piatti, from grappa-cured salmon to a daily-changing risotto to chicken Marsala. An equally large, all-Italian wine selection is poured by the quarter, half or full liter, supplemented by specialty cocktails and a handful of beers.

Method Roasters is a small-batch coffee roaster getting better coffee in the hands of more people. In a garage in 2013 some friends setup a coffee roaster with the idea to start a coffee company. Their goal was to honestly-source amazing coffees, prepare it with passion and serve the community. Since then MCR has grown to serve the greater Rocky Mountain area and give back to the community through scholarship funds, non-profit partners and direct donations.
